Eóin is passionate about tourism and travel in Ireland and Scotland and makes it his mission to ensure each guest feels a ‘céád mile fáilte’ (a hundred thousand welcomes) and that they get to experience the best that Ireland and Scotland have to offer. From a childhood spent travelling the length and breadth of Ireland with his family ceilí band, Eóin developed a love for Ireland, its hidden treasures and an appreciation for the culture and people he met in all four corners of Ireland. He attended university in Edinburgh and worked for many years across Scotland, spending his time travelling the country and developing an affection for its beauty, people and culture. So deep is his appreciation for Scotland, that it is where he spent his honeymoon and continues to holiday in Scotland and around Ireland with his young family to this day.
Some of Eóin’s favourite spots in Scotland are the Isle of Skye, where he recommends a stop at Dunvegan Bakery, the oldest bakery on Skye to sample some of their delicious homemade produce, along with a trip to Neist Point to spend an afternoon exploring the lighthouse in its spectacular surroundings. Fish and chips in Portree are a must for the authentic experience. For self-catering options in the highlands, Eagles Brae offers peace and tranquillity along with being situated in the most beautiful setting, where it is common to see deer wandering past the lodges. For culture and fine dining, Eóin feels that it is impossible to pass Edinburgh, a city of charm, culture and hidden delights at each turn. His favourite spot to eat is in the Sheep’s Heid Inn in Duddingston, a traditional Scottish pub setting, with a diverse and beautifully prepared menu.
In Ireland, as a proud Cork man, Eóin recommends a stop at Blarney Castle, the English Market and visits to the delightful West Cork with its stunning coastline along the Wild Atlantic Way. He has many fantastic recommendations for food options in Cork city should you be interested. He enjoys travelling to Dingle with his wife and children to enjoy the beautiful scenery along with the vibrant and lively culture evident throughout the area. Dingle has many fantastic food spots, with some of the freshest seafood imaginable. The Lyrath Estate in Kilkenny is one of his favourite luxury hotels in Ireland, so much so that he held his wedding reception in this stunning venue. With top class service, delicious food and elegant surroundings, it offers exceptional accommodation and service to all guests.
